– 1/2 Cup Lentil
– 1/3 Cup Quinoa
– 2 Cups of Water
– 3 Small Cucumbers
– 50g Cherry Tomatoes
– 2 Avocados
– 2 Tbsp Balsamic Vinegar
– 2 tsp Honey
– 1 tbsp Extra Virgin Olive Oil
– 30g Sweet Corn
– Salt & Black Pepper to Taste
– 1 tbsp Lemon Extra Virgin Olive Oil
or 1 tsp Lemon Juice
1. Wash and rinse the lentil and quinoa, you can also soak it for a few hours instead. Add the washed lentil, quinoa and around 2 cups of water (or fill till the water is 1 inch above the top layer).
2. Cut the cucumber, cherry tomatoes and avocado into chunks. Defrost some frozen corn, or you can use fresh corn.
3. For the vinaigrette, miix together olive oil, balsamic vinegar and some honey.
4. Once the lentil and quinoa are cooked, scoop into a big bowl, add cucumber, cherry tomatoes, avocado and corn into the bowl. Pour the vinaigrette on top. Give it a good mix and its ready to be served.
